Ingredients: ‏‏ -⅓ cup flour -½ teaspoon salt -½ teaspoon black pepper -2 eggs -¾ cup panko bread crumbs -1 cup shredded coconut -1 pound shrimp peeled with tails attached -3-4 tablespoons vegetable oil or coconut oil (olive oil works too) -3 tablespoons thai chili sauce -6 tablespoons orange, peach or apricot jam ‏‏ ‎ ‎ Steps: ‏‏ 1. First step is to pour the flour into the bowl 2. Then, add spices. 3. In a separate bowl, add the eggs. 4. Give eggs a quick whisk 5. In another bowl, add panko crumbs and coconut. 6. In another bowl, add chili sauce and the jam. 7. Grab the shrimp and dip it into the flower mixture. 8. Then dip it into the eggs. 9. Finally, coat in coconut mixture. 10. Bake for 10-12 minutes
