Ingredients: ‏‏ -3 tablespoons oil -¼ cup onion, finely chopped -1 pound boneless chicken, cut into strips or cubes -1 teaspoon ginger, minced -1 teaspoon garlic, minced -2 ¼ cups chicken broth (low sodium) -4 teaspoons Cajun seasoning -Salt and pepper to taste -1 cup uncooked rice -⅓ cup green pepper, cut into small strips -⅓ cup red pepper, cut into small strips -⅓ cup frozen corn -2 tablespoons cilantro, roughly chopped ‏‏ ‎ Steps: ‏‏ 1. Heat oil in a nonstick pot over medium-high heat. 2. Cook onions until they are soft and see-through. 3. Add chicken, ginger, and garlic to the pot and cook until the chicken is golden brown. 4. Pour in chicken broth and add Cajun seasoning, salt, and pepper. 5. Mix in the rice, green pepper, red pepper, and corn. 6. Cover the pot and cook on medium heat for 20-25 minutes, or until the rice is fully cooked and the liquid is absorbed. 7. Sprinkle cilantro on top and mix gently. 8. Serve hot, and enjoy your meal!
