Ingredients: ‏‏ - 5 tablespoons unsalted butter - 1 1/4 cups granulated sugar - 2 large eggs + 1 egg yolk (cold) - 1 teaspoon vanilla extract - 1/3 cup vegetable oil (or any neutral oil) - 3/4 cup Dutch-processed cocoa powder (or unsweetened cocoa powder) - 1/2 cup all-purpose flour - 1 tablespoon cornstarch - 1/4 teaspoon salt - 3/4 cup semisweet chocolate chips ‏‏ ‎ Steps: ‏‏ 1. Preheat the oven to 325°F (163°C). 2. Line an 8x8-inch metal pan with foil or parchment paper and spray with nonstick spray. 3. In a microwave-safe bowl, melt the butter with the sugar (about 1 minute). 4. Whisk to combine. 5. Whisk in the eggs, egg yolk, and vanilla extract. Then stir in the vegetable oil and cocoa powder until smooth. 6. Add flour, cornstarch, and salt. Gently fold until just combined. 7. Then stir in the chocolate chips. 8. Spread the batter evenly in the prepared pan. 9. Bake for 30 minutes, or until a toothpick inserted in the center comes out with moist crumbs. Don’t overbake. 10. Let the brownies cool completely before cutting. Store leftovers in an airtight container for up to 3 days. 11. Enjoy the brownies gooey warm, chewy at room temperature, or fudgy when chilled!
